Over the past three business days, we’ve been wrapping up multiple days of Amsterdam’s sprawling ADE, and particularly our participation in the Traktor Cookery school. Here’s what else took place on Friday and over the weekend.
Meal 1: Francois K
The day started busier than ever with the promise of some freshly made sushi from one of NYC’s most legendary DJs—Francois K. There was a full house even an hour before the food was served, with friendly faces like Eats Everything and Patrice Baumel hanging out, and business talks happening across the tables.
Francois received much praise for his three rounds of homemade sushi and for his 16-plus years hosting NYC’s Body & Soul nights. He says that having hosted such long residencies like Body & Soul and Deep Space, his Monday residency at Cielo, he’s seen the perspective of the people change the most. He also discussed the proliferation of dance music over the years, going from the clubs and radio to iPhones and stores’ soundtracks, and how that progression has reduced the need for a resident DJ to play curator to a regular crowd.

Meal 2: Mute Records’ Daniel Miller
Friday’s second meal was without a doubt the most relaxed of the sessions thus far, with many ADE attendees deep in their meetings and the hangovers starting to become visible. Fortunately, Mute Records head Daniel Miller prepared a wholesome and healthy vegetable and tofu stir fry. After the meal, Miller spoke about the success of Mute’s artists, particularly those who were signed 30 years ago, like Depeche Mode, Yazoo, and others. He said that his main concern at the time, despite believing fully in his artists, was that the records actually get pressed, since the major labels had control over the pressing plants. Despite briefly relinquishing Mute’s ownership to EMI, Miller is now back in charge of the company’s day-to-day operations, and he attributes its longevity to simply working with great artists. He’s also taken a shine to DJing again, and is excited by the accessibility of music today through the digital landscape.
Meal 3: Loco Dice
Loco Dice cooked up some amazing food as well, and with the crowd pretty tipsy and partying by this point, we feel it more appropriate to just leave you with his track selection, and a link to check out more of the event’s photos.

4.8 cup water
9 Tbsp rice vinegar
4.5 Tbsp sugar
1.5 tsp salt
6 Tbsp white sesame seeds
18 abura-age (deep fried tofu), blanched
3 cup dashi soup stock
7.5 Tbsp sugar
6 Tbsp mirin
6 Tbsp soy sauce
Remarks: The amount of sugar is something I would contest as being a bit excessive
Offer people two variations on the plain type. One would be with sesame seeds, and the second would be with very thin slices of cooked bamboo shoots (take-noko)
